August 25, 2023This is the kind of pilaf you could use for lunch or dinner bowls with chicken, beef or tofu. It is not only a very healthy dish, it is also very easy and quick to make. You can make your own cauliflower rice at home or buy it frozen or fresh. Both work well.
Ingredients:
- 1/4 cup olive oil
- 1 medium onion, finely chopped
- 2-3 green onions, chopped (optional)
- 1 medium cauliflower OR 2 cups cauliflower rice ( 1 lb bag)
- 2 medium carrots, coarsely grated
- 3 red/yellow/orange peppers, chopped
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon dry chili peppers (optional)
- salt and pepper to taste
Directions:
- If you don’t want to make your own cauliflower rice, skip this step: Wash and cut cauliflower into florets. Feel free to use the stems as well. Using a food processor prepare cauliflower rice by pulsing the processor. If overdone, cauliflower will become very fine like snow, which will not give the desired texture to the pilaf.
- In a medium size pot, sauté onions in olive oil until onions are golden brown, 3-4 minutes.
- Add peppers, and green onions, sauté for another 2-3 minutes.
- Add carrots and the cauliflower rice, sprinkle cumin, turmeric, black pepper, chili pepper(optional) and salt, stir.
- Let it cook on low heat for another 4-5 minutes stirring until cauliflower is tender. Remove from the heat. Transfer to serving plate. Serve hot.
