June 1, 2024Fava bean paste/dip is definitely an appetizer favorite. Typically it is made with dried fava beans. It requires that you soak the beans overnight, then cook them. This version is made with fresh fava beans. They come frozen, double peeled, very easy to cook. Lemon peel in the recipe gives it a fresh taste. Enjoy!
Ingredients:
- 1 large onion, chopped
- 1/4 cup olive oil
- Two 14 oz. packages of frozen green fava
- Salt to taste • ½ cup fresh dill, chopped
- Zest of 1 small lemon
- 2 table spoons finely chopped red onions (optional)
- 1/2 cup fresh dill, finely chopped, 1 tablespoon set aside for garnish
- 1 table spoon olive oil for drizzling on top (optional)
Directions:
- Heat 1/2 cup olive oil in a medium size pan. Sauté onions 3 minutes until golden.
- Add fava beans and 3/4 cup of water, bring to a boil. Add salt, stir, lower heat and cook for 15 minutes until fava beans are tender.
- Take a handful of beans and set aside in a small bowl for garnish.
- Transfer cooked beans into a bowl. Using an immersion blender, mash the beans into a smooth paste.
- Saving a spoonful of dill aside for garnish, add chopped fresh dill and lemon zest to the fava paste. Mix well with a spoon.
- Transfer fava paste to a mold sprayed with oil. Let it cool to room temperature. Cover with plastic wrap and keep it in the refrigerator for at least an hour.
- Place a large flat plate upside down over the mold.
- Quickly invert the fava paste onto the plate.
- Garnish with fava beans set aside. Sprinkle with fresh dill red onions (optional) on top.
- Serve with pita bread or crackers.
