December 2, 2023Some of us favor savory treats to sweets. I’m definitely one of those people. This savory cookie is late Ozcan Hanim teyze’s special family recipe. It’s been a favorite among kids and grownups alike. It is quick to make, melts in your mouth. These cookies freeze well. All you have to do is to pop them in the oven for 5 minutes to reheat for a freshly baked taste.
Ingredients:
- 9 oz (1 cup) feta cheese, grated
- 7 oz (14 tbsp) 1 ¾ sticks butter at room temperature
- 1 tsp. baking powder
- 2 cups flour, sifted
- Salt to taste
- 1 egg yolk for glazing the top
- Sesame seeds and/or black nigella seeds for garnish (optional)
Directions:
- Preheat oven to 350 degrees.
- In a large bowl, combine grated feta cheese and soft butter. Mix well with a hand held mixer.
- Add baking powder, mix.
- Slowly add flour. First one cup, then ½ cup at a time and mix. It should be a soft and shiny dough.
- Divide dough into 8 pieces. Take a piece, roll it into a thick rope. Flatten it gently to form a long flat rectangle about ½ in thick. If it is too thin, it will taste more like a cracker, not like a cookie. Cut the dough at an angle, forming a parallelogram shaped cookie.
- Place cookies on a parchment paper lined baking sheet.
- Using a brush, glaze the tops with egg yolk.
- Sprinkle sesame seeds and/or black nigella seeds on top (optional).
- Bake at 350 degrees for about 50 minutes until golden brown.

Variations:
- You can add finely chopped dill into the dough to add flavor
- You can use cookie cutters to shape the cookies
- These freeze well. Warm them in a preheated oven (at 350) for 5 minutes before serving. They will taste like they just came fresh out of the oven.
