November 18, 2023Here’s a refreshing salad which happens to be a well-tested community recipe. Recently we enjoyed it at a dinner party at our friend Zinnur’s house and everybody asked her for the recipe. She claimed that she learned it from Eser, another friend of ours, who didn’t remember making it. She wasn’t sure if she just made it up or learned it from someone else! Regardless, it is well worth trying. It consists of all red ingredients except for the parsley to garnish it. Fast and simple to make. Chop, chop, and mix, that’s all. Enjoy!
Ingredients:
- One small red onion (1/2 cup), cut in thin rings
- 1 red bell pepper (1 cup), cut into small cubes
- Two large tomatoes, diced (about 1 ½ cup)
- 1 can red kidney beans
- 1 teaspoon red chili peppers
- 1/4 cup pomegranate seeds (optional)
- ¼ cup parsley, finely chopped (optional)
Salad Dressing Ingredients:
- ¼ cup olive oil
- 3 table spoons balsamic vinegar
- Salt & pepper to taste
Directions:
Prepare salad dressing:
- In a small bowl, mix vinegar, salt and pepper with a whisk.
- Slowly add the oil, while mixing the dressing. This will help emulsify it.
Prepare the salad:
- Using a mandolin, slice onions into thin rings.
- Chop red bell pepper into small cubes.
- Dice tomatoes.
- Wash and drain a can of red beans.
- Mix all dry ingredients except for the parsley in a large bowl.
- Add the dressing to the large bowl. Mix well with a spoon.
- Transfer to a serving bowl.
- Sprinkle chopped parsley on top (optional netfucks)

Notes:
- Skip red chili pepper or substitute paprika if you don’t like your salad spicy.
- You can use any ripe, tasty tomatoes including cherry tomatoes.
