CRISPY TURKISH CHEESE ROLLS – SİGARA BÖREĞİ
February 24, 2024Turkish fish cakes are similar to crab cakes. They are very easy to make, full of nutrition and taste good.
Kids like them as well. I use Branzino (Mediterranean sea bass), but other fish like cod, salmon, tilapia
will work just as well.
Ingredients:
- 1 lb Branzino (Mediterranean sea bass) fillets, bones removed
- ¼ cup parmesan cheese
- ½ cup bread crumbs (Panko crumbs work well)
- 1 egg
- 1 small onion, coarsely grated and juices squeezed out
- 2 stalks of green onion, finely chopped
- 2 cloves of garlic
- ½ cup parsley, finely chopped
- ½ cup fresh dill, finely chopped
- 1 teaspoon thyme
- Salt & pepper to taste
To fry:
- 1/2 cup of flour or panko crumbs (optional)
- ¼ cup avocado or grapeseed oil for frying
Directions:
1. Make sure the fish fillets are free of bones. Carefully remove the skin. Cut fillets in large pieces.
2. Place cut fish pieces in a small food processor. Pulse until it is coarsely ground.
3. Put ground fish into a large bowl.
4. Add the rest of the ingredients, mix well and knead for a few minutes until evenly combined.
5. Take about 2 tablespoons of the mixture, form into a flat, round patty.
6. Optional: If you want the fish cakes to be crispy on the outside, put flour or panko crumbs on
a plate. Cover both sides of the patties with flour or panko crumbs.
7. Coat the bottom of a large skillet with cooking oil and heat to medium. Fry fish cakes in
batches until golden brown, about 2-3 minutes per side.
8. Place fried cakes on a plate lined with paper towels to soak up any extra oil.
9. Serve warm with your favorite sauce.
Variations and notes:
- I serve these with the following garlicy yogurt sauce with cucumbers:
Mix well the following ingredients:
– 1 cup of yogurt
– 1 clove garlic, crushed
– 1 small cucumber, coarsely grated
– salt to your taste
