July 20, 2024This is a very light and flavorful apple dessert, similar to apple pie, yet different. This is somewhere between and apple cake and an apple crumble. It is baked upside down and inverted after baking, revealing the beautifully caramelized apples. Many thanks to our friend Mutlu’s late mother Nazire hanım. Unlike typical eyeballing “some of this, enough of that” style recipes that come from Turkish mothers and grandmothers, her beautifully handwritten recipe had very clear and precise instructions.
Makes 12 servings
Ingredients:
Apple filling:
- 2 large granny Smith apples, peeled and thinly sliced
- 1 cup sugar
- 1 tablespoon lemon juice
- 1 teaspoon cinnamon
Dough:
- 1 egg
- ½ cup milk
- 1½ cups flour
- 2 teaspoons baking powder
- 1 tablespoon sugar
- 6 tablespoons butter at room temperature
- ½ teaspoon salt
Garnish:
- ½ cup chopped walnuts (optional)
Directions:
- Preheat oven to 350°F.
- Grease a round, 9-inch round pie pan.
- Prepare apple filling: Mix apple filling ingredients (peeled, sliced apples, sugar, lemon juice & cinnamon) in a bowl. Set aside for 30 minutes to allow flavors to mix and apples to soften. Mix occasionally.
- In a small bowl, beat the egg, add the milk and mix. Set aside.
- 30 minutes after you make the apple filling, stir gently and spoon the filling into the pie pan, spread evenly.
- In a large bowl mix flour, baking powder, sugar, and salt. Add butter. Using a fork, mix all ingredients until incorporated into a dough. Spread the dough mixture covering the apple filling evenly. You may want to dip a second spoon into a bowl of water and help spread the dough with it. Wetting the spoon with allow you to spread the dough without it getting stuck on the spoon.
- Bake in the preheated oven until the top is golden brown and a toothpick comes out clean, about 40 minutes.
- Remove from the oven, let it cool for 30 minutes.
- Invert the cake onto a serving dish.
- Garnish the top with chopped walnuts (optional)
- Serve warm or at room temperature.
Notes:
- It goes well with vanilla ice cream.
