Green Lentil Soup with Carrots and Pasta-Yeşil Mercimek Çorbası

December 16, 2023A light, tangy cake with blueberries. It was the perfect companion to our mid-morning coffee along with some tahini cookies. Recipe is from my friend Banu who is an outstanding businesswoman, a skilled baker, as she is a gracious host. Enjoy!
Ingredients:
- 2 eggs
- ¾ cups sugar
- ½ cup milk
- ½ cup olive oil
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- Zest of 1 lemon
- 1 teaspoon vanilla extract
- 1 cup walnuts, coarsely chopped
- 1 cup fresh or frozen blueberries
Directions:
- Preheat the oven to 350 degrees.
- In a large bowl, mix sugar and eggs.
- Add all ingredients except for the walnuts and the blueberries. Mix well with a whisk.
- Add the walnuts and the blueberries.
- Pour the cake mixture into a well-greased bread loaf pan or any baking pan of your preference.
- Bake at 350 degrees until a toothpick inserted in the middle comes out clean and the top is golden brown.
- Remove from the oven, let it cool for 15 minutes before removing from the baking pan.
