Tangy Red Lentil Soup – Ekşili Malhıta
December 30, 2023Christmas is just around the corner. It is baking season. Thanksgiving was mostly about pumpkins – pumpkin soup, pumpkin pie and pumpkin bread… Let’s not forget the BANANA BREAD. Around the year, I bake this often in many forms. My grandsons love it. Leo likes the muffins, Murat likes it with chocolate chips, no-nuts, and Bodhi will eat it in any form. I often bake it and freeze it. This recipe like the pumpkin bread recipe is from my dear friend Kathy, who is a wonderful baker. More of her secret formulas will be revealed here in the future. I took her recipe and experimented with different kind of flours, adding nuts, raisins and chocolate chips, etc. Play with it, you can’t go wrong.

Ingredients:
- 2 cups mashed bananas
- 3 eggs
- 1 cup olive oil
- 1 tsp. vanilla
- 2 cups flour
- 3/4 cup sugar
- 1 tsp. baking soda
- ¼ tsp. salt
- ½ cup walnuts (optional)
- 2 table spoons of sliced almonds for garnish (optional)
Directions:
- Preheat oven to 350 degrees.
- In a large bowl, combine bananas, eggs, oil, and vanilla and mix well with a hand mixer.
- Add flour, sugar, baking soda, and salt to banana mixture. Mix well until smooth.
- Add walnuts and mix them in with a spoon
- Pour batter into greased 9×5-inch pan.
- Sprinkle sliced almonds on top for garnish (optional)
- Bake at 350 degrees for about 50 minutes or until done. When a toothpick inserted into the bread comes out clean, it is ready.
Variations:
- You may want to use 2 round (9 inch) oven safe dish if you want to serve it like a cake.
- I often use one 9 inch round dish and one 9×5 inch bread pan. The bread loaf yields smaller slices this way.
- You can make cupcakes with this batter as well.
- You can use 1 cup of regular flour and 1 cup of whole wheat or almond flour.
- Pecans can be used instead of walnuts.
