November 11, 2023Naming a dessert “mud” takes a lot of courage for sure! This mud is so tasty that you think you are in heaven enjoying this delightful dessert. Imagine mud made out of pistachios, buttery shredded dough sweetened by a touch of syrup… Just 4 ingredients, yet so delicious!
Like most pistachio based desserts, it originated in the Southeastern Turkey, the pistachio capital of the world. An old dessert shop named “Hacı Fadıloğulları” in Kilis used to have a similar dessert less the pistachios. Upon a request from a customer, they added the pistachios and they ended up in inventing a new dessert. They named it Heaven’s Mud and it was an overnight sensation.

Ingredients:
- 8 oz (1 cup) Kataifi fillo dough, cut into small pieces
- 12 table spoons (1 ½ stick) unsalted butter
- 6 oz (1 ½ cup) pistachios, ground, save 1 table spoon for garnish
- Breakfast cream to serve (optional)
Syrup:
- 1 ½ cup sugar
- 1 ½ cup water
Directions:
Prepare syrup first:
- In a medium pan, mix water and sugar, bring to a boil
- Let it simmer for 5 minutes on medium low heat.
- Remove from heat, let it cool to room temperature. It will make 2 cups of syrup.
Preparing the dessert:
- Cut Kataifi fillo dough into small pieces, set aside.
- Melt butter in a medium size pan
- Add shredded kataifi pieces, roast until crunchy. Color begins to turn golden.
- On low heat add pistachios, stir.
- Add syrup, stir well until it becomes a homogeneous mixture. Let it simmer until the syrup is absorbed. Remove from the heat.
- Serve with breakfast cream and a sprinkle of pistachios on top (optional). Serve it while still warm or at room temperature.
Notes:
- You can put it in a mold after it cools down. Line mold with plastic wrap to make it easy to remove the dessert from the mold.
- You can store it in the refrigerator or even freeze it. But, make sure it is no colder than room temperature before serving.
- When it is still warm, you can roll them into small balls and serve them with toothpicks.
