Rainbow Fruit Tower

 

Here’s a refreshing fruit dessert that looks appetizing and tastes heavenly.
It is easy to make, easy to serve. It makes a great breakfast/brunch dessert as well.
I’m very thankful to Gonul hanim for this wonderful recipe. Enjoy!

Ingredients:

  • 1 20 oz can sliced Pineapple in Juice (10 slices)
  • 2 Oranges for juice & zest
  • 2 Table spoons sugar
  • 2 Table spoons corn starch
  • 2 Oranges (preferably Cara Cara oranges), sliced
  • 2 Kiwi, peeled and sliced
  • 5 Strawberries
  • 10 Blueberries
  • Sprigs of mint (optional)

Directions:
Remove pineapples from the can, drain, save the juice. Make zest of one orange using a fine zester. Juice two oranges including the one you used for zest. In a medium sauce pan, combine pineapple juice, orange juice, sugar and corn starch. Stirring constantly with a whisk, bring it to a boil over medium heat. Reduce heat to low, continue stirring for another minute or two, until it thickens but not quite as this as pudding. Remove from heat, set aside to cool.

Since there are 10 slices of pineapples in a can, you will assemble 10 servings of fruit dessert. You will need 10 slices of each fruit to build the fruit tower.

Peel the 2 Cara-Cara oranges, slice each orange into 5 slices, about ½ inch thick.
Peel and slice each kiwi into 5 slices
Stem the strawberries, cut each strawberry into two thick slices, removing the top and bottom so that slices can stand flat.

Arrange fruits in a large tray in the following order from large to small, forming a stack of fruit.

  • Pineapple at the bottom,
  • Orange slices over the pineapple,
  • Kiwi slices on the oranges,
  • Strawberry slices on kiwi

Taking a spoon full of the pudding at a time, pour orange pudding over the fruit stack you have formed until the fruits are glazed with the pudding.

Place a fresh blueberry on top of each pyramid completing the assembly.

Chill in the refrigerator for at least an hour. Transfer to a serving dish. Garnish with sprigs of mint (optional). Serve chilled.

Note: Chances are, you’ll have some pudding left over. You can place it in a small bowl, garnish with chopped pistachio nuts as in the last picture below. Enjoy!

If you have pudding left over, you can garnish it with chopped pistachio nuts and enjoy!
